If you love tacos but want to switch things up, these Carrot Tortilla Tacos are about to become a new favorite.
They’re easy to make, full of protein, and a fun way to get more vegetables into your day, without sacrificing the foods you love.
The best part? You can customize them however you want. Swap the chicken for your favorite protein, add avocado or salsa, or turn up the heat with your favorite taco seasoning and hot sauce.
Ingredients:
- 4 shredded carrots
- 2 eggs
- 1 cup shredded mozzarella
- 1.5 tsp garlic salt (other season to preference like taco seasoning)
- 8 oz precooked chicken
- 2 handfuls arugula
- 2 tbsp sour cream
- Drizzle of hot sauce (optional)
Instructions:
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Peel and shred carrots using a box grater or food processor.
- In a large bowl, combine shredded carrots, eggs, mozzarella, and seasoning until fully combined.
- Divide mixture into 4 equal portions, and place each portion onto the baking sheet and form into thin tortilla-shaped circles (5-6 inches wide)
- Bake for 25 minutes or until edges are golden and tortillas feel set.
- Remove from oven and let cool slightly to firm up.
- Fill each tortilla with cooked chicken, arugula, Greek yogurt or sour cream, and hot sauce
