Sweet Potato Nachos

Ingredients:

1 sweet potato

1 tsp of olive oil

½ lb of cooked ground beef

2 tbsp chopped yellow onion

¼ cup shredded cheese

2 tbsp sour cream

¼ avocado

1 pinch of salt

Drizzle of hot sauce (optional)

Instructions:

Preheat oven to 375°F. Thinly slice sweet potato and place on baking sheet. Drizzle with olive oil and salt. Bake sweet potatoes for 15-20 minutes or until cooked through. Layer cooked sweet potatoes with cooked ground beef, onions, shredded cheese, sour cream, avocado or your other favorite nacho toppings. Enjoy.
